What's for dinner?

I know Corned Beef really isn't Irish but I love it so I'm going to make it:) I am partially Irish, I believe, so technically I can't make whatever I want and call it Irish.

Corned Beef

1 pkg Corned Beef Brisket
1 cup Brown Sugar
12 oz Non-Alcoholic Beer

Dump it all in the crock-pot and turn it on high for at least 6 hours. The longer the better.

Colcannon

4 potatoes, peeled, chopped
1 head cabbage, chopped
1 onion, diced
2 cloves garlic, minced
4T butter
1 cup sour cream
salt
pepper

Boil potatoes till tender, drain and mash. Saute onions and cabbage in butter till soft. Add garlic saute for another minute. Add onion and cabbage mixture, sour cream, salt and pepper to potatoes and gently mix together. Serve with Corned beef and some additional butter:)

Green No-Bake Cream Cheese Pie

1 8oz cream cheese, softened
1 can sweetened condensed milk
1/3 c lemon juice
1 8oz container of whipped topping
1 pre-made graham cracker pie crust
green food coloring

Blend Cream cheese until smooth. Mix in condensed milk. Add lemon juice until mixed. Fold in whipped topping and food coloring. Pour into graham cracker crust. Chill for at least an hour. Serve with favorite pie filling on top.

Happy St. Patrick's Day!
